Butternut Squash + Rainbow Chard + Bean Soup

Butternut Squash + Rainbow Chard + Bean Soup

Ingredients:

  • 4 slices bacon, cut up (optional) or 1/4 cup olive oil

  • 1 large onion, 1/4 inch dice

  • 2 carrots, peeled and cut into 1/4 inch cubes

  • 2 celery stalks, 1/4 inch dice

  • 4 cloves of garlic, minced

  • 1 butternut squash, peeled, seeded, cut into 1/4 inch cubes

  • 1 can of chopped tomatoes

  • 1 box of chicken stock

  • 2 t. salt + 1 t. pepper

  • fresh or dried herbs (thyme, rosemary, oregano)

  • 2-3 bay leaves

  • Parmesan cheese rind (optional)

  • 14 oz. can of chickpeas

  • 14 oz. can of white beans

  • 1 large bunch of rainbow chard, stems chopped like celery into small pieces, leaves cut up

  • 1/2 bunch of flat leaf parsley, chopped

In a large, heavy-bottomed pot on a medium heat, sauté the bacon for several minutes to render the fat (if not using bacon, use olive oil instead). Add the onions, carrots, and celery, stirring occasionally for 7-8 minutes until softened. Add the garlic and cook for a minute. Add the butternut squash and cook for a few minutes.

Add the chicken stock, tomatoes, herbs, bay leaves, parmesan rind, salt and pepper. over and let simmer on low for for 20 minutes. Add the rinsed beans, and chard stems. Cook for 10 minutes. 

Remove about a quarter of the soup(making sure not to take the bay leaves or parmesan rind), and puree it in a blender until smooth. Add the puree back into the soup to thicken it. Feel free to puree more depending on texture you desire. 

Add in the chard leaves and let simmer 5 minutes or so. Taste and add more salt or pepper to taste. Remove the bay leaves and parmesan rind. Off the heat, add in the parsley, and serve!
