Summer Peach Tart

Peach Tart with Custard Filling

a great use of those juicy summer peaches

Crust:

  • 1 stick cold unsalted butter, cut into pieces

  • 1 1/4 cups flour

  • 1/4 scant teaspoon salt

  • 1 teaspoon sugar

  • 2 tablespoons sour cream or whole milk yogurt

Filling:

  • 5 ripe peaches, peeled and cut into large wedges

  • 1/3 cup sour cream or whole milk yogurt

  • 3 large egg yolks

  • 1 cup sugar

  • 1/4 cup flour

  • 1/4 teaspoon salt

Preheat the oven to 375º F.

To make the crust, use a food processor to pulse together the butter, flour, sugar, salt until it forms small crumbs. Add the sour cream (or yogurt) and let the machine run a few seconds until the dough forms into a ball. Remove the dough from the food processor and form it into a flat disk. Place it into a 9-inch tart pan with a removable bottom. Use your fingers to press out the couch to cover the bottom an sids of the pan evenly. Bake for 20 minutes in the center of the oven, or until it is lightly golden brown.

Leave the crust to cool in the pan on a wire rack for 20 minutes. Reduce the oven temperature to 35oº F.

In the meanwhile, prepare the peaches and the custard filling. Peel and cut the peaches into large wedges. I like to use a variety of white and yellow peaches, but use whatever you have that is ripe.

In the food processor, use the metal blade to combine the egg yolks, flour, sugar, sour cream (or yogurt), salt for 5 seconds. Scrape down the sides and process again for 15 seconds.

After the crust has cooled, pour about half the custard in the tart shell. Place the peaches in concentric circles in the shell, placing them close together. Top the peaches with the remaining custard. Be careful not to overfill the crust. You may not use all of the custard.

Bake at 35oº F for about 50 minutes, or until the top is lightly golden brown and the custard looks set.

Let cool for at least 10 minutes before removing the sides of the pan. Can be served warm, or at room temperature. Serves 8.
